Speculoos Tiramisu

INGREDIENTS

(SERVES 6 - 8)

  • 4 EGGS, SEPARATED
  • 3/4 CUP SUGAR
  • 500 G MASCARPONE CHEESE
  • 1 TBSP INSTANT COFFEE DISSOLVED IN SCANT 1/2 CUP HOT WATER
  • 2-3 TBSP MARSALA OR AMARETTO
  • 225 G GINGER Biscuits
  • 6 TBSP UNSWEETENED COCOA POWDER

Ready to dig in? Grab your LPQ bowls and fill them with decadent tiramisu!

Instructions: 

In a small bowl, whisk the egg yolks and sugar until pale and creamy. Place the mascarpone in a large bowl and use a fork or whisk to fluff it up, then pour in the egg yolk mixture and mix until well combined. In a separate bowl, whisk the egg whites to form stiff peaks, then gently fold into the mascarpone mixture.

Place the coffee and Marsala in a shallow dish. Take 6 serving dishes (now’s the time to whip out those empty chocolate spread jars, or any dish that holds about 1 cup/250 ml). Dip a biscuit into the warm coffee mixture, and start lining each dish with a single layer of biscuits. They should stay crunchy!

Spread a 2.5 cm layer of mascarpone cream over the biscuits. Place a second layer of soaked biscuits on top, then spread over another layer of cream. Repeat this twice more.

Finally, sprinkle each tiramisu with a layer of cocoa powder using a fine sifter or sieve. Refrigerate for at least 4 hours before serving your indulgent treat!
