Who doesn't love a pie?  That warming, cozy feeling goes down a treat - any time of the year.  But in the summer, a pie cries out for fantastic summer berries.  We've got just the recipe for you to enjoy at your next picnic, friendly gathering, or just for your own summertime treat.

Instructions:

1. Prepare a double batch of this all-butter pie dough.

2. Preheat the oven to 175°C.

3. Mix together the sugar, salt, zest and cornstarch in a large bowl, whisking together to remove any lumps.

4. Stir in the fruit until all the cornstarch is absorbed.

5. Allow the fruit to macerate for at least 4 minutes (or up to 4 hours).

6. Place the filling into a prepared pie crust.

7. Roll out the second portion of pie dough to 1/8″ and use a fluted pastry wheel to cut 1″ wide lattice strips.  Lay the strips across the pie in a lattice pattern.

8. Brush the crust with egg wash and sprinkle with sugar.

9. Bake at 175°F for 25 minutes or until the crust is golden brown. Depending on your oven, this could be anywhere from 25 minutes to 40 minutes.
